TUNA CROQUETTES 
2 lb. butter
2 tbsp. flour
1/4 tsp. salt
1/4 c. milk
3 tbsp. grated onion
1 can white flake tuna
2 c. cracker crumbs
4 eggs, beaten

Melt butter slowly; add flour, salt, and pepper. Slowly add milk, stirring constantly. Cook until thick; set aside to cool. Add rest of ingredients; roll in crumbs. Dip in eggs and roll in crumbs again. Bake at 375 degrees until brown.
