5 lbs. beef (beef, venison, or caribou) 5 rounded tsp. Morton's Tender Quick salt 2 1/2 tsp. mustard seed 2 1/2 tsp. course black pepper 2 1/2 tsp. garlic salt 1 1/2 tsp. liquid smoke Mix well once a day for 3 days. Keep covered and refrigerated. On the 4th day form into compact rolls. Place on broiler pan. Bake at 150 degrees for 8 hours. Turn several times. May want to put in smoke after cooking the 8 hours. Smoke approximately 2 hours. |
