FLUFFY RICE - WEST INDIES 
2 c. long grain or brown rice
1 tsp. salt
1 tbsp. butter
Raisins and chopped green pepper for garnish

Fill 4 quart pan with cold water. Add salt and bring to a boil. Add rice slowly, then butter and boil uncovered for about 15 minutes or until rice grains are tender. Add 1 cup cold water and strain immediately in a colander. Add raisins and chopped green pepper. Serve immediately.
