BROCCOLI AND CHICKEN CASSEROLE | |
2 (10 oz.) pkgs. frozen broccoli spears (or fresh) 2 whole chicken breasts 1 can Cream of Mushroom soup 1 can Cream of Chicken soup 1/2 c. mayonnaise 2 tbsp. butter 1/2 tsp. curry powder 1 tsp. lemon juice 1/4 c. onion, minced 1/2 c. stuffing mix Grated cheese Bake chicken in foil with butter at 400 degrees for 1 hour. Cook broccoli in salted water until barely tender. Combine soups, mayonnaise, onion, curry powder and lemon juice. Butter casserole dish and place broccoli on bottom. Cut chicken into pieces and lay on broccoli. Pour soup mixture over chicken. Melt butter, toss stuffing with butter. Sprinkle over casserole. Top with grated cheese. Bake about 30 minutes at 350 degrees. |
