OLD-FASHIONED PINEAPPLE UPSIDE-DOWN CAKE | |
10 to 12 pineapple slices 1/4 c. butter 3/4 c. brown sugar, packed 1 c. flour 3/4 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 1/4 c. shortening 1/2 c. milk 1 egg In a bowl, sift flour with sugar, baking powder and salt. Add shortening and milk. Beat for 2 minutes. Add egg and 2 tablespoons pineapple syrup; beat 2 minutes longer. In a large cast iron pan, place the pineapple slices, butter and brown sugar and melt together, then add the cake batter on top of the pineapple mixture. Bake for 40 to 45 minutes in a 350°F oven. Makes about 8 servings. Serve with whip cream. |
