SWEET AND SOUR KIELBASA 
1 green pepper, cut in sm. slices
1 onion, diced
3 tomatoes, sliced
1 lg. Kielbasa (smoked sausage)
1 tbsp. cornstarch
1/2 tsp. ground ginger
1 tbsp. vinegar
1 tbsp. soy sauce
1/2 c. apricot preserves
2 c. drained pineapple chunks
Rice

Cut in pieces and saute the green pepper, onion, tomatoes, and Kielbasa for 5 minutes. Combine the cornstarch, ginger, vinegar, soy sauce and apricot preserves; stir into sausage mixture. Heat to thicken. Add the pineapple chunks; heat. Serve over rice. 4 to 6 servings.
