CRYSTALIZED FRUIT: ORANGES &
LEMON
 
Peel fruit in 1/4 inch strips. Cook in water 1/2 to 3/4 hour. Scrape out white insides (pulp). Cook 1 cup sugar and 1 cup water for 15 minutes. Add fruit and continue cooking for 15 more minutes, drain fruit. Add 1 cup sugar and coat the fruit. Spread out on wax paper to dry 4 to 5 hours.
