FRESH RHUBARB PIE 
1 1/4 c. sugar
1/4 c. cornstarch
2 tsp. orange rind
1/4 tsp. salt
5 c. 1 inch pieces rhubarb
1 tbsp. butter

Mix together dry ingredients. Toss with fruit. Add 2 teaspoons water, if you like. Pour into pie crust and bake in 425 degrees for 45 minutes. You can use double crust if you like.
