SPINACH SALAD 
1 lb. spinach
1/2 lb. mushrooms, sliced
6-8 strips bacon, cooked, drained and crumbled
1/2 c. vegetable oil
1/3 c. red wine vinegar
Ground pepper
Hard boiled egg, chopped
Bleu cheese, crumbled

Combine spinach, mushrooms and bacon in a bowl. Season with pepper and toss with oil and vinegar. Add egg and bleu cheese before serving. Serves 2-4.
