RASPBERRY MUFFINS 
1 1/2 c. flour
1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 c. sugar
1 (12 oz.) pkg. frozen raspberries, thawed
2 eggs, well beaten
2/3 c. oil
1/2 c. chopped pecans or chocolate chips (optional)

Grease 12 muffin cups. In a large bowl mix flour, baking soda, cinnamon and sugar. Make a well in the center and stir in the undrained raspberries and eggs. Thoroughly mix in oil and pecans or chocolate chips (optional). Spoon batter into prepared pan, filling 2/3 to top. Bake at 400 degrees for 15 to 20 minutes. Makes 12 muffins.
