LEBKUCHEN 
1/2 c. honey
1/2 c. molasses
3/4 c. brown sugar
1 egg
1 tbsp. lemon juice
1 tsp. grated lemon rind
2 3/4 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. cardamom
1 tsp. allspice
1 tsp. nutmeg
1/3 c. cut up citron
1/3 c. chopped nuts (almonds)
Glazed icing
Blanched almond halves for decorating
Red and green candied cherries for decorating

Mix honey and molasses. Bring to a boil; cool to room temperature. Stir in sugar, egg, lemon juice and rind. Stir dry ingredients together and then blend with liquids. Mix in citron and nuts. Chill dough overnight.

Heat oven to 375 degrees. Roll dough a small amount at a time, keeping the rest chilled. Roll out on a lightly floured board, 1/8 to 1/4 inch thick. Cut into rounds, rectangles or squares (2x2 inch). For squares place an almond half in the center. Quarter a green or red cherry and place 1 quarter in each corner. For rectangles and round, decorate similarly.

Place decorated cookies 1 inch apart on lightly greased cookie sheet. Bake 6 to 12 minutes or until golden brown, but still soft. Transfer immediately to a cooling rack and brush with glaze. When cool and glaze is hardened, store in tightly covered container. Makes 6 dozen. Tradition Bavarian.
