BAKED MOSTACCIOLI 
1 lb. mostaccioli
6 qts. water
2 tbsp. salt
1 lb. ground beef
1/2 tsp. pepper
1 tsp. garlic salt
1/2 c. grated Romano cheese
1/2 c. diced Provolone cheese
4 c. homemade tomato sauce (recipe below)
16 oz. sm. curd cottage cheese
2 c. shredded Mozzarella cheese

Cook mostaccioli in 6 quarts boiling salted water until al dente. Brown ground beef with pepper and garlic salt in large skillet. Drain fat. Stir in remaining ingredients except Mozzarella. Drain cooked Mostaccioli thoroughly. Place noodles in 9"x13" baking pan. Pour meat mixture over and mix well. Cook with foil and bake in 375 degree oven for 20 to 25 minutes or until bubbly. Sprinkle with Mozzarella and bake, uncovered 5 additional minutes until cheese melts. 6 to 8 servings.

HOMEMADE TOMATO SAUCE:

1 lg. onion, chopped
1 tbsp. minced shallots
2 tbsp. olive oil
1 (6 oz.) can tomato paste
1 (28 oz.) can tomatoes
2 tsp. sugar
Salt & pepper to taste

In large saucepan saute onion and shallots in oil until soft but not browned. Add remaining ingredients and mix thoroughly. Cut up tomatoes into smaller pieces. Cover and simmer 1 hour. Flavor is best if sauce is made the day before and refrigerated. Makes 4 cups.
