MEXICAN DEVILED EGGS 
8 eggs, hard cooked
1/2 c. cheddar cheese, grated
1/4 c. mayonnaise
1/4 c. salsa
2 tbsp. green onion
1 tbsp. sour cream
1/4 tsp. pepper

Slice eggs in half, lengthwise, and transfer yolk to a mixing bowl. Add remaining ingredients to yolk. Mix and mound mixture into egg slices. Refrigerate.
