ITALIAN CHICKEN 
3/4 c. Italian seasoned bread crumbs
1/4 c. Parmesan cheese
4 whole chicken breasts, boned, skinned and halved (boneless thighs may also be used)
1/2 c. thinly sliced onion
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
4 oz. hot ham (or any style preferred)

Combine crumbs and cheese; dip chicken in mixture to coat lightly. Arrange in baking dish. Save remaining crumb mixture.

In saucepan, cook onion in butter until tender. Blend in flour. Stir in milk all at once. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Stir in spinach and ham. Spoon mixture over chicken and sprinkle with remaining crumb mixture. Bake, uncovered, in a 350 degree oven for 40 minutes or until done. Serves 6.
