LEMON LOAF 
6 tbsp. soft butter
2 eggs, beaten
1 tsp. baking powder
1 1/2 c. flour
1 c. sugar
1/4 tsp. salt
1/2 c. milk
Freshly grated rind of 1 lemon

Cream butter and sugar until light and fluffy. Add eggs and lemon rind and mix well. Sift flour with salt and baking powder. Add to cream mixture alternately with milk. Pour in greased and floured loaf pan. Bake 1 hour in 350 degree oven.

TO MAKE GLAZE:

Mix sugar with lemon juice (1 lemon, 2 tablespoons sugar); let stand while loaf is baking. When cake comes out of oven prick holes in cake with fork and spoon glaze over cake. Cool on rack.
