ZUCCHINI PUFF 
3 c. zucchini, unpeeled, chopped
1 lg. onion, chopped
1/2 c. salad oil
1 c. Bisquick
4 eggs, beaten
1/2 c. grated Parmesan cheese
1 tsp. salt
Dash of pepper
2 tbsp. parsley

Preheat oven to 350 degrees. In large bowl mix zucchini, onion, salad oil, Bisquick mix and eggs. Stir and blend. Add cheese, salt, pepper and parsley. Mix well with spoon. Pour in greased casserole (1 1/2 quart). Bake for 35 to 40 minutes or until golden brown.
