MOM'S CHEESECAKE 
16 graham crackers, crushed into crumbs
1/4 c. butter, melted

Pour butter over crumbs, mix well, and mold into 9 inch pie plate. Bake at 350 degrees for 2 minutes.

FILLING:

1 (8 oz.) pkg. cream cheese, room temperature
2 eggs, separated
1/2 c. sugar
2-3 drops lemon extract

Beat cream cheese well. Beat egg yolks and add to cream cheese. Add lemon extract. Whip egg whites until stiff; add sugar and beat again. Fold into cream cheese mix. Pour into prepared pie shell and bake at 350 degrees for 40-45 minutes until set.

TOPPING:

1 sm. carton sour cream
2 tbsp. sugar
1/2 tsp. vanilla

Mix all ingredients well and spread over pie. Bake 5 more minutes.
