OATMEAL AND WALNUT PANCAKES 
1 c. whole wheat flour
1 c. rolled oats
1/2 c. unbleached flour
1/2 c. cornmeal
1 tbsp. baking powder
1 tsp. salt
1 c. finely chopped walnuts
2 lg. eggs
2 1/4 c. milk
1/4 c. honey
1/4 c. vegetable oil

Combine all the dry ingredients in a large bowl. Toss with your fingers for 5 minutes to mix. In a separate bowl beat eggs and blend in the rest of the ingredients. Now mix with the dry ingredients real good. Let stand for 10-20 minutes, then cook. Makes 12-18 hotcakes.
