DIABETIC CHOCOLATE CHIP COOKIES | |
1/4 c. butter, softened 1 1/2 tsp. vanilla 1 c. + 2 tbsp. flour 2 tsp. baking powder 1/2 c. semi-sweet chocolate chips 1/4 c. chopped nuts 4 tsp. liquid sweetener 1 egg 1/2 tsp. salt 1/4 tsp. baking soda Combine first 4 ingredients in small mixer bowl. Beat at high speed for 1 to 2 minutes or until light and fluffy. Add next 4 ingredients with 1/2 cup water. Blend at low speed until well combined. Stir in chocolate chips and nuts. Dough will be soft. Drop on ungreased cookie sheet. Bake at 425°F for 10 to 12 minutes. |
