LOW-CAL LASAGNA 
1/3 lb. chopped meat
1/2 onion, peeled and chopped
1 clove garlic
4 oz. tomato paste
2 oz. hot water
1 (#2) can plum tomatoes
1/2 lb. lasagna noodles
1/4 c. grated Parmesan cheese
1/4 c. cubed Mozzarella cheese
1 1/2 c. Cass Clay 2% cottage cheese

Brown beef with onion and garlic. Blend tomato paste with hot water and add plum tomatoes and meat mixture. Boil rapidly for 3 minutes, then simmer for 1 hour. Cook noodles, drain.

In 8x10 inch baking dish, layer sauce, noodles, Parmesan cheese, then sauce, Mozzarella cheese and cottage cheese. Continue layering, ending with a top layer of sauce sprinkled with Parmesan. Bake in a 350 degree oven for about 30 minutes, or until the lasagna is bubbling. Let stand 5 to 10 minutes before serving. Serves 3. 220 calories per serving.
