CHICKEN ENCHILADAS 
1 sm. onion, chopped
2 tbsp. butter
2 cans boneless (chunk) chicken or 2 c. chopped chicken
8 oz. cream cheese
Flour tortillas
Cheddar cheese
Monterey Jack cheese
1 carton whipping cream

Saute onion in butter, add chicken and saute until bubbly. Mix in cream cheese. Put mixture into tortillas and roll up and place in casserole dish. Cover with 1 carton whipping cream. Bake at 350 degrees for 20-25 minutes until thick and bubbly. Top with cheese and put back in oven until cheese is melted.
