CARROT CASSEROLE 
2 c. cooked, mashed carrots
1 c. Ritz cracker crumbs
1 c. milk
3/4 c. melted butter
1/4 c. grated onion
3 beaten eggs

Gently mix all together and bake in a greased souffle or casserole dish for 50 minutes or until brown on the edges.
