FRESH TOMATO BAKE 
1 c. chopped onions
1/2 c. butter, divided
7 lg. tomatoes, peeled and coarsely chopped
2 tbsp. light brown sugar
1/2 tsp. salt
5 c. bread cubes

Saute onions in 2 tablespoons of the butter until tender in skillet over medium heat. Add tomatoes, sugar, and salt; mix well. Bring to a boil; reduce heat. Simmer, uncovered, until tomato mixture is reduced by half, stirring often. Melt remaining butter in medium skillet over low heat. Add bread cubes; toss. Place 3 cups of the bread cubes in greased 8 x 8 x 2 inch baking dish. Spoon tomato mixture evenly over bread. Sprinkle remaining bread cubes around edge of pan. Preheat oven to 400 degrees. Cover and bake 15 minutes. Uncover and continue baking 15 minutes or until golden brown. Makes 6 to 8 servings.
