Servings: About 4. Preparation time: About 15 minutes. Cooking time: About 10 minutes. 4 lg. onions, peeled 2/3 c. rice 1 c. chicken broth 1/2 c. chopped green pepper Remove centers from onions, leaving a 1/4 inch shell; refrigerate centers for later use. In small bowl, combine rice, broth and green pepper; spoon into onion centers, dividing equally. Place cooking rack in 4 or 6 quart pressure cooker; arrange onions on top. Add 1 cup water. Close pressure cooker cover securely. Place pressure regulator on vent pope. Cook at 15 pounds pressure for 10 minutes. Cool pressure cooker at once. Do not attempt to remove cover until pressure is completely reduced. Remove onions and serve. |
