EASY CHEESY MUFFINS 
1 c. flour
1 c. cornmeal
1/4 c. sugar
2/3 c. sharp Cheddar cheese, grated
1 egg
1 c. milk
2 tbsp. vegetable shortening, melted or vegetable oil

Preheat oven to 325 degrees. Grease 12 muffin cups. Set aside. Combine dry ingredients and cheese in bowl. Break egg into separate bowl, beat lightly. Stir in milk and shortening. Add to flour - cheese mixture, blend thoroughly. Fill muffin cups about 2/3 full. Bake 20 minutes or until golden brown.
