LASAGNA WITH MEATBALLS | |
MEATBALLS: 1 1/2 lbs. meat 1 c. bread crumbs 2 jars of your favorite sauce (52 oz.) 1 box lasagna noodles 24 oz. Mozzarella cheese (lite, low-cal or regular) 30 oz. ricotta cheese (low cal or low fat) 1 bag spinach 1 bag broccoli 1 or 2 eggs 3 or 4 oz. grated Parmesan cheese Make meatballs with meat and bread crumbs. Lightly brown meatballs, add to sauce of your choice. Cook one hour. Mix ricotta, cooked spinach and Parmesan and one egg. Mix and set aside. Cook broccoli and noodles. Lightly grease 11 x 9 x 2 1/2 inch roasting pan. Start with noodles then layer spinach mix; noodles, broccoli, noodles, meatballs and sauce; noodles, spinach mix and so on until all ingredients are layered. Top with meatballs and sauce and then Mozzarella cheese. Cook at 350 degrees for 30 minutes. Cool for 15 minutes before cutting. This is one of Howard's specialities! |
