VEGETABLE-TACO PUFF 
2 eggs
3/4 c. skim milk
3/4 c. flour
2 c. frozen mixed vegetables
3/4 lb. lean hamburger
1/2 c. chopped onion
1 (16 oz.) jar taco sauce
1/2 c. shredded Mozzarella cheese

In a bowl, mix eggs, milk and flour. Beat until smooth. Pour into greased 9"x9" baking pan. Bake at 425 degrees for 15 minutes.

Meanwhile, cook hamburger and onion until brown. Drain off fat. Stir in taco sauce and frozen vegetables. Cover and heat on low until vegetables thaw (about 10 minutes). Spoon the meat-vegetable mixture on top of baked crust. Sprinkle top with cheese. Bake in oven for about 5 minutes or until cheese melts. Serves 6.
