GRILLED CHICKEN 
1/2 c. apricot jam
2 tbsp. soy sauce
2 tbsp. dry white wine
2 tbsp. minced scallions
2 tbsp. minced garlic
2 tbsp. minced ginger
2 tbsp. lemon juice
Salt and pepper
1 chicken, washed, dried and quartered

Combine all ingredients, except chicken, in a bowl and mix well. Rinse chicken pieces and pat dry. Place in bowl and toss to coat in marinade. Cover, refrigerate, turning occasionally for at least 4 hours.

Grill chicken over medium-hot coals, basting frequently with marinade until juices run clear when pricked with fork. Good hot or cold.
