SAUSAGE COFFEE CAKE 
2 lbs. Owens pork sausage (1 hot and 1 regular)
1 c. onion, chopped
1/2 c. Parmesan cheese
1 c. Swiss cheese, grated
2 eggs
1/2 tsp. Tabasco sauce
2 tsp. salt & pepper
1/2 c. celery, chopped
4 c. biscuit mix
1 1/2 c. milk
1/2 c. mayonnaise
Egg yolk to spread on top

Fry sausage with onion until brown. Drain off fat; add cheese, whole eggs, Tabasco sauce, salt and pepper and celery. Make batter of biscuit mix, milk and mayonnaise. Put half of batter in greased pan. Cover with sausage mixture. Cover with remaining batter. Brush with egg yolk. Bake at 400 degrees for 20 to 25 minutes.
