STRAWBERRY CHEESECAKE 
1 pt. strawberries
1 lemon
1 1/2 pkg. (8 oz. size) cream cheese
Confectioners' sugar
2 individual cans vanilla pudding
1 prepared graham cracker pie shell (or make your own)
Raspberry preserves

In bowl, beat cream cheese, 3 tablespoons lemon juice and 1 can pudding until smooth with electric mixer. Beat in 1/3 cup confectioners' sugar and rest of pudding and spread in pie shell. Arrange berries over pudding and cover with mixture of 1/2 cup preserves and 3 tablespoons water. Chill.
