SALSA 
5 lb. tomatoes
3 c. chopped onion
1 c. chopped and seeded peppers (combination of green and banana peppers)
1 c. cider vinegar
3 1/2 tsp. salt
Optional: add a few chopped hot peppers to spice it up

Dip tomatoes in boiling water 30-60 seconds to loosen skin. Dip in cold water and slip off skins. Core and chop tomatoes. Combine all ingredients in large pan. Bring to a boil; reduce heat and simmer 30 minutes. Fill hot pint jars and process in boiling water for 15 minutes. Makes 6 pints.
