JELLO RAINBOW SQUARES | |
"Somewhere over the rainbow" in Wallingford to be exact, comes this colorful recipe from Lynn Hoffman. Although it will take more than a magic wand to produce this dish (about 4 1/2 hours time) it really is very simple and fun to make. When you cut and serve these Rainbow Squares you will be the envy of all the Lollipop Kids from the Wizard of Oz, and everyone else. You will be glad you did spend the extra time involved to complete this rainbow. Serve this along with dinner or even at the end of the meal. It fits anywhere! It also makes a colorful addition to a birthday party or buffet table. 5 (3 oz.) pkgs. Jello, different colors Sour cream Dissolve the first box of Jello with 1 1/4 cups hot water. Separate 1/2 cup, set aside. Now pour 3/4 cup in 8x8 inch pan, refrigerate and set (about 15 minutes only). Do not let it set completely. Take the 1/2 cup that was put aside and add to it 3 tablespoons sour cream. Whip until blended. Add on top of first layer of plain Jello. Again let almost set, (about 15 minutes). Repeat for remaining 4 boxes. Once completed, refrigerate until firm. Cut into squares, 1x1 inch or 2x2 inch if desired.
