PUMPKIN ROLL CAKE 
3 eggs, beaten for 5 minutes
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. plain flour
1 c. chopped nuts
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt

Grease and flour 15 x 10-inch cookie sheet. Add the eggs to sugar. Mix together pumpkin, lemon juice. Add to egg/sugar mixture. Add the flour, spices, baking powder and salt. Spread in pan and sprinkle with nuts on top.

Bake at 375°F for 15 minutes. Turn out on towel with confectioners sugar. Roll into roll shape and cool. Re-roll and spread with mixture.

Mixture for Pumpkin Roll:

2 (3 oz.) cream cheese
1/2 tsp. vanilla
4 tsp. butter
1 1/2 c. confectioners sugar

Mix together. Spread on cake. Re-roll and cool.
