SCRAMBLED EGGS IN A RED SAUCE 
1 tbsp. oil
1 lg. onion, chopped
1-2 hot peppers, chopped
6 eggs
1 can Rotel tomatoes

Put oil in iron skillet; get hot. Add chopped onion and peppers until onion is soft, then scramble in eggs. Then add Rotel. Is a good breakfast dish served with flour tortillas as your bread.
