GREEN TOMATO PICKLES | |
8 - 10 lb. green tomatoes, do not slice thin 2 c. pickling lime 2 gal. water 2 qt. cider vinegar 9 c. sugar 1 tbsp. each salt, celery seed, whole clove and pickling spice Cut tomatoes in halves then quarters. Soak in lime mixed with 2 gallons water for 24 hours; drain. Then soak in cold water for 3 hours. Keep covered with ice. Drain. Mix vinegar, sugar and spices. Bring to a boil in a large pot. Remove from heat. Add cut tomatoes and let stand overnight. Next day, boil mixture with tomatoes for 30 minutes. Pack into hot jars. |
