CANDIED SWEET POTATOES 
8 med. sweet potatoes
1/3 c. brown sugar
1/4 c. butter
1/2 tsp. salt
3/4 c. tiny marshmallows

Boil potatoes, I prefer them unpeeled, they seem to be more tender. Cut potatoes 1/2 inch thick. Layer in 1 1/2 quart casserole along with butter, brown sugar and salt. Repeat layers. Bake at 375 degrees for 30-40 minutes or until glazed. Sprinkle marshmallows over top and bake about 5 more minutes. Serves 6.
