INCREDIBLE VEGETABLE COOKIES 
1 (8 1/2 oz.) Jiffy corn muffin mix
10 oz. frozen chopped spinach (cook in microwave)
1/2 c. diced onion
2 beaten eggs
1/2 c. grated Parmesan cheese
1/2 c. grated Cheddar cheese
1/4 c. butter
1/2 c. Blue cheese dressing
1/2 tsp. garlic powder

Mix all ingredients together except spinach. Cook spinach according to package directions and drain. Add spinach to mixture and mix well. On greased cookie sheet, spoon mixture, walnut size 2-inches apart

Bake at 350°F for 12 to 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
