PEACH - PECAN PIE | |
3 egg whites 1 c. sugar 14 soda crackers 1/4 tsp. baking powder 1/2 c. chopped pecans 1 can peaches, drained well & thinly sliced Whipped cream or Cool Whip Beat the egg whites until stiff. Gradually beat in the sugar. Add the crackers which have been crumbled and rolled into fine crumbs. Add baking powder and pecans and stir. Add vanilla and stir well. Fill a buttered pie plate with this soupy divinity - like mixture and bake in a 325 degree oven for 30-40 minutes. Cool. (It rises like a cake and then falls and sinks in the middle as it cools.) Top with the peaches and blanket with the whipped cream or Cool Whip when ready to serve. Store leftovers in refrigerator. |
