CRAYFISH, SHRIMP OR CHICKEN
FETTUCINI
 
3 onions, chopped fine
3 celery stems, chopped fine
2 bell peppers, chopped fine
3 sticks butter
1/4 c. flour
4 tbsp. parsley
2 garlic pods, minced
3 lbs. crayfish tails (or shrimp: 2 fryers, debone)
1 pt. (half and half) cream
1 lb. Velveeta, cut in sm. pieces
2 tbsp. jalapeno relish
1 lb. fine fettucini noodles
Parmesan cheese
Salt and red and black pepper

Add onions, celery and bell pepper to butter. Saute 15-20 minutes; stir often. Add flour, cream, Velveeta, jalapeno, garlic and tails. Add seasonings. Cook on low fire 30-45 minutes; stir often.

Mix with cooked noodles. Pour into greased casserole dish. Sprinkle Parmesan and grated Velveeta on top. Bake 15-20 minutes. (For chicken - boil noodles in chicken broth.)
