FROZEN ONION RINGS 
Select large, firm onions, slice and separate into rings. Blanch in very hot water for 15 seconds. Chill in ice water and drain. Roll in flour. Dip in milk. Then roll in half and half mixture of pancake mix and cornmeal. Freeze on cookie sheet, using waxed paper between layers. When ready to deep fry, drop frozen rings into 375 degree oil. Remove when golden brown and sprinkle with salt (or salt substitute while hot).
