BLACKBERRY CAKE | |
1/2 c. brown sugar 1/2 c. shortening 1/2 c. buttermilk 1 tsp. baking soda 1 tsp. nutmeg Raisins; optional 1/2 c. sugar 2 eggs 2 c. flour 1 tsp. cinnamon 1 c. blackberry preserves/jam Cream shortening, sugars, and eggs. Sift together flour, soda, cinnamon, and nutmeg. Add mixture alternately with buttermilk. Add preserves and mix well. Grease two 8 inch cake pans and line with waxed paper. Bake at 350 degrees for 25-30 minutes. Caramel Icing is good on this cake. |
