ZUCCHINI PIE 
4 c. peeled, sliced zucchini
1/2 c. brown sugar
1/2 c. white sugar
1/2 tsp. cinnamon
3 tbsp. butter
1/4 tsp. nutmeg
1/4 tsp. salt
3 tbsp. flour
3 tbsp. lemon juice
Crust for 2-crust pie

Mix zucchini, sugars, spices, salt, flour and lemon juice in bowl. Place in pastry lined pie tins and dot with butter. Cut slits in top to allow steam to escape. Bake at 350 degrees for 50 to 60 minutes or until pastry is browned and filling tender and bubbly. Serves 6 to 8.
