SPIRITED DATE NUT BREAD
1 c. chopped pitted dates
1/2 c. coffee liqueur such as Kahlua
1/2 c. warm water
1 tsp. grated orange peel
2/3 c. firmly packed dark brown sugar
2 tbsp. butter
1 egg
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2/3 c. chopped pecans

Combine dates, liqueur, water and orange peel. Set aside so that the fruit will absorb the flavors while you prepare the batter. Grease a 9-inch loaf pan. Preheat oven to 350 degrees. Cream together the sugar, butter, and egg until fluffy. Sift together the flour, baking soda, and salt. Add the flour mixture to the creamed ingredients alternately with the date mixture. Fold in pecans. Spoon bread into loaf pan and allow batter to stand 7 minutes. Bake in lower rack of oven for 60-70 minutes. Cool on wire rack for 10 minutes, then remove from pan and allow to cool completely. Wonderful spread with cream cheese!
