CHICKEN PAPRIKA
2 broiler chickens, cut up
2 c. chicken broth
1/2 c. butter
1 lg. onion, minced
1 tbsp. flour
1 tbsp. paprika
1 c. sour cream

Sprinkle chicken lightly with salt. In large deep skillet, saute onions until soft. Add chicken, saute, turning frequently, so they turn bright yellow. Sprinkle with paprika, saute 4 or 5 more minutes. Add broth, bring to boil, cover. Reduce heat and simmer until chicken is done, about 35 to 40 minutes. Check if more stock is needed, then add more broth or water. Remove chicken to platter. Blend flour into sour cream, stir into sauce until smooth and thick. Return chicken to pan, heat gently for 5 minutes. Makes 6 servings.
