JUNE'S BANANA CREAM PIE 
3/4 c. sugar
1/3 c. all-purpose flour
1/4 tsp. salt
2 c. milk
3 slightly beaten egg yolks
3 tbsp. butter
1 tsp. vanilla
2 lg. bananas
1 (9 inch) baked pie shell
Sweetened whipped cream

In a 1 1/2 quart saucepan, combine sugar, flour and salt; gradually add milk. Cook over medium heat, stirring constantly, until thickened. Cook 2 additional minutes.

Blend a small amount of hot mixture into egg yolks, return all to pan. Cook 1 minute. Do not boil. Remove from heat, add butter and vanilla. Cool completely, stirring occasionally. Slice bananas into cooled pie shell. Pour in filling. Top with sweetened whipped cream. I use Cool Whip.
