PEPPER STEAK 
4 tbsp. oil
1 lb. steak cut in little pieces
1 pinch pepper
2 green peppers, sliced into strips
1 clove minced garlic
3/4 tsp. ginger
2 chopped scallions
1 c. chicken broth
1 tbsp. soy sauce
4 tbsp. water
2 tbsp. cornstarch

Brown the meat in oil and sprinkle with pepper. Add peppers, garlic, scallions and ginger. Add the chicken broth. Cover and cook for 10 minutes.

Mix together soy sauce, water and cornstarch. Add to beef mixture. Cook for a few more minutes until thickened. Serve with rice. Serves 4.
