CHICKEN DIVAN | |
1 (3 lb.) fryer, split or pieces of your choice 1 bunch broccoli (or 2 pkgs. frozen) 2 tbsp. butter 3 tbsp. flour 2 c. broth Salt & pepper to taste 3 tbsp. sherry wine 1/4 lb. grated Parmesan cheese Boil chicken in seasoned water until tender. Save broth. Bone chicken and slice. Cook broccoli until just tender, drain and place in a casserole dish. Melt butter in pan an blend in the flour. Measure the chicken broth to make 2 cups. If not enough, add milk to make up difference. Add broth to butter and flour, stirring until thick. Add salt, pepper and sherry. Cover broccoli with chicken, add sauce. Top with cheese. Bake at 400 degrees for 15 minutes. |
