FRENCH ONION SOUP 
5 or 6 lg. onions, sliced
1 stick butter
3 (10 1/2 oz.) cans beef condensed beef broth
2 beef bouillon cubes
2 c. water
1/2 c. white cooking wine or sherry
2 French or hard rolls, sliced & toasted
1/2 lb. sliced Mozzarella or Swiss cheese

1. Melt butter and saute onions until lightly browned.

2. Add broth, bouillon cubes, water and simmer approximately 1/2 hour. Add wine and keep warm.

3. Toast bread. Place soup in oven-safe bowls and place bread on top.

4. Cover with sliced cheese and broil until cheese melts and browns.

Serves 4 to 5.
