CHOLESTEROL - FREE SUNRISE
MUFFINS
 
1/2 c. hot water
3/4 c. raisins
2 1/4 c. flour
3/4 c. granulated sugar
1 tbsp. baking powder
2 tsp. grated orange peel
1/8 tsp. cinnamon
1/8 tsp. nutmeg
3/4 c. Weight Watchers cholesterol-free reduced calorie mayonnaise
3/4 c. frozen cholesterol-free egg product, thawed
1 tsp. vanilla extract

Spray 12 cup muffin pan with non-stick cooking spray. Add water to raisins. Set aside to cool.

In bowl, combine flour and next 5 ingredients. Blend mayonnaise, egg product and vanilla. Stir in raisins and water. Pour mayonnaise mixture into flour mixture. Stir until just moistened. Fill each muffin cup 1/3 full. Bake in preheated 375 degree oven 22-25 minutes or until muffins are golden brown. Remove from pan; serve warm.
