BREAD PUDDING 
2 loaves bread
2 dozen eggs
3 qt. milk
2 tbsp. vanilla
1 1/2 c. sugar
2 tbsp. cinnamon

Cube bread; beat eggs with sugar, add milk and vanilla. Pour over cubed bread; sprinkle with cinnamon. Bake until knife inserted in center comes out clean;, at 325 degrees, approximately 45 minutes. Yield: 50 to 60 portions.

FRUIT SAUCE:

1 qt. pineapple juice
1 qt. apricot nectar
1 c. sugar

Heat juice and sugar; thicken with 1/2 cup cornstarch. Ladle over pudding.

VARIATIONS: Add 2 cups raisins to sauce. Use other sauces: lemon, Hawaiian Punch, etc.
